  • 1 T. olive oil
  • 1 lb. smoked sausage, sliced
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 C. white wine
  • 1 C. chicken stock
  • 2 C. canned pumpkin
  • 2 apples, peeled and diced
  • ½ C. heavy cream
  • Dash cinnamon
  • Dash nutmeg
  • Salt and pepper to taste
  • 1 lb. pasta, cooked and drained

In a skillet, heat oil and cook sausage until brown; remove from skillet and set aside. Saute onion and garlic until softened. Add in wine and chicken stock; simmer until liquid reduces by half. Stir in pumpkin and apples, add back in sausage, and then stir in cream. Season with cinnamon, nutmeg, salt, and pepper. Simmer for 10 minutes. In a greased baking dish, add pasta and top with pumpkin mixture. Bake at 350 degrees for 15 minutes.
