Served best with fried rice, this sweet and sour pork will be a great choice tonight. All you have to do is follow the instructions to create a quick and delicious dinner.

  • 1/4 C. cornstarch
  • 1 egg, beaten
  • 1 1/2 lb. pork cubes, boneless
  • 3 Tbs. vegetable oil, divided
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 green pepper, chopped
  • 2 Tbs. water
  • 1 (8-oz.) unsweetened pineapple chunks
  • Sauce:
  • 1 Tbs. cornstarch
  • 1/3 C. packed brown sugar
  • 1/4 C. chicken broth
  • 1/4 C. white wine vinegar
  • 1 Tbs. soy sauce

In bowl, combine cornstarch and egg until smooth. Add pork and toss to coat. In skillet, stir-fry half of the pork in 1 Tbs. oil until no longer pink. Remove. Repeat with remaining pork and 1 Tbs. oil. Set pork aside.

Stir-fry onion and garlic in the remaining oil for 3 minutes. Add green pepper and water. Stir-fry for 2 minutes. Drain pineapple reserving 1/4 C. juice. Add pineapple and pork to pan. Combine cornstarch and brown sugar. Stir in chicken broth, vinegar and soy sauce until smooth. Add reserved pineapple juice to pan. Bring to a boil. Cook and stir for 2 minutes or until thickened. Serve over rice.
