  • ½ pound of chicken, cubed
  • 1 small purple onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup of pineapple
  • ½ cup of chicken stock
  • 3 tablespoons of whiskey
  • 2 tablespoon of red curry paste
  • 2 tablespoons of brown sugar, packed
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • ½ teaspoon of ground ginger

First, season the chicken with garlic powder, onion powder, and ground ginger. Then add chicken to a large pan over medium heat and cook for 5 to 7 minutes. Once the chicken has browned, add the chicken stock, whiskey, red curry paste, onion, bell peppers, zucchini, and pineapple. Cover and allow to steam for an additional 5 minutes or until vegetables are slightly softened. Serve with rice and enjoy!
