Previously most commonly used in Asian cuisine, tofu is now a popular meat substitute. But even if you are not vegetarian, you will be amazed at how delicious the soy-based food is with corn tortillas and salsa.

  • 8 corn tortillas, heated
  • 1 package of firm tofu (8 oz.), drained and chopped
  • 1 cup of canned sweet corn
  • 1 cup of fresh cilantro, chopped
  • 1 red onion, diced
  • 1 large tomato, diced
  • ½ cup of Mexican cheese
  • 1 tablespoon of butter
  • 2 tablespoons of Sriracha sauce
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey
  • salt and pepper

Melt butter in a pan over medium-high heat. Add tofu, Sriracha, soy sauce and honey and salt and pepper and sauté for about 5 minutes until crispy. Remove from heat and set aside.
In a bowl, combine corn, cilantro, onion, tomato and some salt and pepper. Evenly distribute among 8 tacos and top with tofu and cheese.
Serve immediately!
