The eternal debate between chocolate and vanilla cake could end here. For all that I love chocolate, this moist vanilla mug cake could quickly become my favorite. One bite and you may never look at vanilla the same way.

  • 1/4 C. + 2 Tbs. flour
  • 2 Tbs. sugar
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 1/4 C. + 2 Tbs. milk
  • 1 1/2 tsp. vanilla
  • 2 Tbs. butter, melted
  • caramel, topping
  • whipped cream, topping

In a bowl, mix together dry ingredients. In another small bowl, whisk together milk and vanilla. Add the wet ingredients to the dry and then the melted butter. Whisk together until smooth and completely combined. Pour into a 16-oz mug. Cook for 90 seconds on high. If it isn't completely cooked, cook it for 10 second intervals until cooked all the way through. Top with caramel and whipped cream.
