  • 1 large baked sweet potato, skinned
  • 1 cup of cannellini beans, drained
  • ¼ cup of chives
  • 1 egg
  • 3 tablespoons of flour
  • 1 tablespoon of chili flakes
  • 1 tablespoon of garlic powder
  • 1 tablespoons of butter, room temperature
  • 2 avocados, mashed
  • 1 tomato, chopped
  • 5 spring radishes, thinly sliced
  • 2 large green bell peppers, thinly sliced
  • 2 cups of spinach
  • 6 burger buns
  • salt and pepper

Preheat oven to 350 degrees Fahrenheit.
In a large bowl, combine the sweet potato, beans, chives, egg, flour, butter, chili flakes, garlic powder and salt and pepper and mash them together using a fork; add the finely chopped cashews and mix thoroughly. Divide the mixture into six sections and form them into patties the size of your palm. Place them on a greased sheet pan and bake for 20-30 minutes.
For the guacamole, mix the mashed avocados and chopped tomatoes in a bowl. Add salt and pepper to taste and set aside. (Or, it can be substituted with hummus instead, based on preference.)
Cool the patties once they’re out of the oven and assemble the burger: bun, patty, guacamole, spinach, radish, bell pepper, guacamole, bun.
