Avocado and lime juice being a complimentary pair is constantly proven through Latin American cuisine. But this recipe calls for something more: soy sauce. Have a taste of this well-rounded umami goodness of avocado, lime juice, soy sauce and egg, sprinkled with spices; you’ll never go back to the basic avocado egg again.

  • 3 avocados, pitted and halved
  • 6 eggs
  • 4 teaspoons of soy sauce
  • 2 teaspoons of lime juice
  • 1 tablespoon of garlic powder
  • 2 tablespoons of steak seasoning
  • salt and pepper, to taste
  • optional: chopped fresh herbs

Preheat oven to 425 degrees Fahrenheit.
In a sauce dish, mix soy sauce, lime juice and garlic powder.
Take each avocado half and scoop out about two tablespoons worth of avocado. Place the halves on a sheet pan. Pour one teaspoon of the mixture into each pit, then gently crack an egg on top of each one. Sprinkle the steak seasoning over the eggs, then bake for 15-20 minutes.
Let cool. Add a dash of salt and pepper to taste, and top with fresh chopped herbs if desired.
