Tequila Lime Chicken is just as tasty as it sounds. With bright lime to bring out the flavor in the chicken, the simple marinade is one that will impress your dinner guests. Chicken pairs well with alcohol and tequila makes this dish a delicacy. While the alcohol cooks off, the flavor of the tequila stays with the chicken. It's a great main dish to go with just about any meal.

  • 2 boneless chicken breasts
  • 1 c. fresh cilantro, minced
  • 3 cloves garlic, minced
  • 1/4 c. olive oil
  • 1/4 c. lime juice
  • 1 c. tequila
  • 1 jalapeno, minced
  • 1 tomato, chopped

In a bowl, mix the oil, lime juice, cilantro, garlic, jalapeno and tequila until well blended. Add the chicken and turn so the breasts are completely coated. Marinate overnight or for at least three hours.

Heat a frying pan over medium high heat and cook the chicken breasts for five minutes per side or until cooked through.

Slice the chicken breasts and arrange them on plates. Top with the chopped tomatoes and season to taste.

Note: The longer you marinate the chicken, the spicier it will be. If your tastes run to a milder dish, you may want to reduce the amount of jalapeno.
