Everything tastes better with bacon, and this savory chicken recipe is no exception. Thick cut bacon is wrapped around tender chicken that is lightly seasoned, and paired with soft parsley roasted potatoes. This hearty dish is just what your dinner table is missing.

  • 2-3 boneless, skinless chicken breast, tenderized thin and halved
  • 1 lb. russet potatoes, peeled and sliced thin
  • 4-6 slices of thick cut bacon
  • 3 green onions, diced
  • salt and pepper
  • 3 cloves of garlic, sliced
  • 3 T. dried parsley
  • Olive oil

Preheat oven to 425ºF.

In a large bowl, place potatoes and drizzle olive oil over, ensuring all the slices are coated. Top with salt and pepper to taste, and parsley. Pour potatoes onto a lined baking sheet, and set aside. On a clean working station. Place two slices of bacon down then place one piece of chicken breast and a small piece of garlic in the center, fold one side of bacon in towards the middle, and roll the chicken and bacon to form a tight roll. Secure with cooking string or tooth picks and place on baking sheet. Repeat these steps for the remaining chicken and bacon. Lightly season with salt and pepper to taste.

Place baking sheet into oven, and let cook for 30-40 minutes, or until potatoes are tender and chicken and bacon rolls are cooked fully. Take sheet out and let cool for about 3-5 minutes.
