This dish is a great way to celebrate the summer with food. Using dried cherries puts a twist on the traditional cherry pie and using a store bought crust makes it so easy.

  • 1 store bought pie crust
  • 4 C. dried cherries
  • 1/4 C. sugar
  • 3/4 C. water
  • 1/4 C. brown sugar

Roll store bought pie crust over pie tin. Cook according to directions.
Meanwhile, in a medium saucepan, add the cherries, water, and both sugars. Heat on medium, stirring occasionally. Allow mixture to thicken and cherries to cook down sightly, but still maintaining their shape, 10-15 minutes. Allow mixture to cool slightly.
Once cherry filling is close to room temperature, pour into pie crust and refrigerate to set. Serve cold or reheat.
