  • 1 white onion (peeled and diced)
  • 1 T. fresh ginger (finely chopped)
  • 2 cloves garlic (finely minced)
  • 1 jalapeno chilies (seeded, and finely chopped)
  • 1 T. vegetable oil
  • 2 tsp. garam masala
  • 1 tsp. chili powder
  • 1 tsp. cardamom
  • 1/2 tsp. coriander
  • 6 oz. tomato paste
  • 2 C. chicken broth
  • 1/2 C. half & half ( regular)
  • 1 1/2 lbs. boneless skinless chicken breasts (about 2-3, cut into 3/4-inch chunks)
  • 1/2 tsp. black pepper
  • 1 tsp. salt
  • 3 T. margarine
  • Cooked white rice
  • Chopped cilantro for garnish

Heat vegetable oil in a large 12-inch skillet over medium heat until hot. Add white onion, ginger and jalapeno. Stir frequently while cooking until the onion is clear. Stir in garlic, garam masala, chili powder, cardamom, and coriander. Keep stirring. Put the mixture into a blender and add tomato paste and chicken broth. Blend until the mixture is smooth. Pour the sauce back into the skillet and add the half and half. Bring the mixture to a simmer over medium heat and add the chicken breast pieces and salt and pepper. Keep the sauce at a simmer while stirring. Let it cook for about 10-15 minutes until the chicken is cooked all the way and the sauce has thickened a bit.
Cut the remaining three tablespoons of margarine into chunks and stir into the sauce until it's melted. Serve the chicken and sauce over white rice. Garnish the dish with chopped cilantro.
