Ahi tartare is a surprisingly delicious dish, despite it's apparent delicacy. It is also an easy one to prepare and makes a good appetizer when you want to impress someone. The best tartare is made from very fresh fish, so avoid frozen options. You can really dress it up for presentation by using a cookie cutter to press the tuna into, giving it more shape. Top with a sprinkle of black sesame seeds to add crunch and color. However, you needn't do anything special to enhance this flavorful dish unless you really want to. It stands alone just fine.

  • 1 lb fresh ahi tuna
  • 2 tablespoons extra virgin olive oil
  • 1 lime, juiced
  • 1 tablespoon green onions, minced
  • salt and pepper
