  • 1 lb. boneless, skinless chicken breast, cut into 1 inch cubes
  • ½ lb. cherry tomatoes
  • 1 large yellow pepper, cut into 1 inch pieces
  • 4 Tbs. olive oil, divided
  • 1 lemon, divided
  • 1 Tbs. rosemary, chopped
  • 1 large onion, halved
  • 2 large onions, halved
  • 2 red pepper, halved
  • 2 large zucchinis, halved
  • Salt to taste
  • Pepper to taste

Preheat grill to high heat. Alternate placing chicken pieces and yellow pepper pieces on each skewer until there is about 2 inches on each side. Add fresh cherry tomatoes to both ends of each skewer. Evenly rub skewers with 2 Tbs. of olive oil. Season with salt and pepper. Cut lemon in half and squeeze lemon juice over all skewers.

Brush onions, red pepper and zucchinis with olive oil. Use other half of lemon to squeeze lemon juice on vegetables. Season with salt and pepper.

Place on skewers and vegetables, face down on grill. Remove vegetables after 12-15 minutes or until softened. Cook skewers for 15-18 minutes turning occasionally using tongs. Remove from heat and serve warm.
