  • 1 lb. shrimp, peeled and deveined
  • 1 lb. Chinese egg noodles
  • 1 C. broccoli florets
  • 1 large carrot, sliced
  • 3 Tbs. oyster sauce
  • 2 Tbs. olive oil
  • Salt and pepper to taste

Bring water to a boil and cook the egg noodles (this should take a couple of minutes). Heat the oil in a large skillet and add the broccoli and carrots. Cook this for about three minutes until the veggies are more tender. Toss in the oyster sauce and shrimp. Continue to cook the veggies and shrimp for another 5 minutes, until the shrimp is cooked through.
