  • 4 yellow potatoes, quartered
  • 2 tilapia filets
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 tsp. Rosemary, ground
  • 1 Tbs. olive oil
  • Salt and pepper

Heat the olive oil in a skillet and add in the potatoes. Sprinkle them with salt, pepper, and rosemary. Cover the skillet with a lid and flip the potatoes every 3-5 minutes for 25 minutes until they’re tender. Add olive oil in the skillet and move the potatoes to the side. Stir in the peppers until they’re tender. Remove the potatoes and peppers. Season the fish with salt and pepper and cook the filets for 5 minutes on each side until they’re cooked through.
