  • ¾ pounds fresh chorizo sausage
  • 1 green bell pepper, diced
  • 1 cup milk
  • 2 ½ cups dried cavatappi pasta
  • 2 ½ cups grated cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons flour

First, bring a pot of water to boil and add the pasta. Cook for 8-10 minutes and drain the noodles when they are done cooking. In a skillet, brown the chorizo over medium-high heat and break it into smaller pieces with a spoon. Add the pepper and cook until it is softened. Put the chorizo sausage and peppers into a bowl and set aside. Return to the skillet and melt the butter over medium-high heat. Whisk in the flour and cook for 30 seconds before adding the milk. Allow the milk to thicken for 3-4 minutes and then add the cheese and stir until it has melted. Remove the cheese from the heat and add the chorizo and bell peppers. Toss to combine them and add the pasta, stirring to incorporate everything.
