This is the most successful and versatile quick banana bread recipe I've found! You can also use chunky applesauce or a 15-oz. can of pumpkin for wonderful variations.

  • 1/2 C. margarine, softened
  • 1 C. white sugar
  • 2 eggs
  • 1 1/2 C. mashed banana
  • 2 C. all-purpose flour
  • 1 tsp. baking soda

Preheat oven to 350 degrees. Grease and flour one 9x5-inch pan. Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined. Pour into prepared pan and bake at 350 degrees for about 1 hour (or until toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

  • I would assume you replace the bananas with the applesauce (same amount) and same with the pumpkin. I want to know where the salt or levening is.

  • Where does the pumpkin or applesauce come in?? Quantity of applesauce was also omitted.
