  • 1 Tbs. salted butter
  • 6 slices sourdough bread
  • 3 slices cheddar cheese
  • 3 slices mozzarella cheese
  • 3 slices swiss cheese (or any three cheeses of your choice)
  • Store-bought tomato soup
  • 1 handful fresh basil, chopped (optional)

Spread the butter on one side of each bread slice. Add a slice of cheddar and a slice of mozzarella and a slice of cheddar to one slice of bread and one slice of swiss to the other slice of bread. Repeat for each sandwich. Place bread cheese side up in the pan and cover, allowing cheese to melt (check after 2 min).
Assemble sandwiches and cover again, cooking until bread is lightly browned and cheese is completely melted. Remove from heat and cut in half.
Prepare tomato soup according to directions, garnish with chopped basil if desired. Serve immediately.
