You've had jam bars to join your afternoon tea, but have you ever included marshmallows? This recipe produces a rather grown-up s'more that can be enjoyed all day. Fruity preserves and crisp, yet fluffy marshmallows are what your day is missing.

  • 1 1/2 C. all-purpose flour
  • 1/3 C. sugar
  • pinch of salt
  • 10 T. unsalted butter, room temperature
  • 6 T. preserves (flavor of choice)
  • 2/3 C. mini marshmallows

Preheat your oven to 375°F and line an 8x8-inch baking dish with foil. In a medium bowl, whisk together flour, sugar, and salt. Use your hands to work in the butter to form a crumbled dough. Press dough mixture into the bottom of your foil-lined baking dish. Freeze for 10 minutes. Bake for 15 minutes. Spread the preserves onto the crust, and return to the oven for another 20 minutes. Remove, sprinkle with marshmallows, and bake for another five minutes or until marshmallows appear toasted. Let stand for 20 minutes before serving.
