  • 1 package of extra firm tofu, dried and cubed
  • 1 red onion, cubed
  • 1 red bell pepper, cubed
  • 1 green bell pepper, cubed
  • 1 cob of corn, sliced
  • 2 cups of cherry tomatoes
  • 1 cup of basil pesto
  • 1 tablespoon of olive oil
  • Red pepper flakes, to taste
  • Salt and pepper, to taste
  • Basil pesto sauce, to serve

To begin, marinate the cut tofu in the pesto for at least 30 minutes in the fridge. Once marinated, preheat the grill to medium-low heat. To prepare the skewers, alternate between the tofu, red onion, bell peppers, corn, and cherry tomatoes. Brush with olive oil and sprinkle with red pepper flakes, salt, and pepper. Grill for at least 10 minutes, making sure to turn frequently. Serve with an extra side of pesto sauce and enjoy!
