  • 1 (9 in.) pie crust
  • 3 slices bacon, crispy and chopped
  • 1/2 C. frozen spinach, thawed, rinsed and dried
  • 3 Tbs. onion, chopped
  • 4 large eggs, beaten
  • 1 C. half-and-half
  • 1/2 C. milk
  • 1/2 C. shredded cheddar cheese
  • 1/2 C. shredded Swiss cheese
  • 1/2 tsp. pepper
  • 1/8 tsp. seasoned salt
  • 3/4 tomato, thin sliced and halved

Place the pie crust in a round cake pan and freeze for 15 minutes. Bake the crust for 15 minutes at 350 degrees. In a bowl, combine the eggs, cheeses, milk, half-and-half, bacon, spinach, onion, pepper, and seasoned salt. Mix well before pouring it into the pie crust and even out the top. Top with the sliced tomatoes. Bake for 45 minutes and cool 15 minutes before serving.
