  • 4 slices of whole wheat bread, toasted
  • 4 cups of cherry tomatoes, halved
  • 3 cups of ricotta cheese
  • 1 cup of sprouts, for garnish
  • 3 tablespoons of olive oil, divided
  • 1 teaspoon of garlic, minced

Heat a skillet with olive oil over medium heat. Sautee the cherry tomatoes for 5 minutes, or until slightly browned. Next, add the garlic and continue to cook for an additional minute. Remove from heat. Add a generous amount of ricotta to a slice of toast, top with the tomatoes and a handful of sprouts. Drizzle with the remaining olive oil. Serve and enjoy!
