My cousin Tony has always been a great cook, and he even has his own restaurant now- my favorite meal is still his famous tuna casserole he used to make me when I was a young girl.

  • 13 oz. tuna (in spring water)
  • 6 oz. "no yolks" egg noodles
  • 1/2 C. chopped celery
  • 1/3 C. green onion
  • 2/3 C. sour cream
  • 1/2 C. mayonnaise
  • 2 tsp. mustard
  • 1/2 tsp. thyme
  • 1 sm. zucchini, sliced
  • 1 med. tomato
  • 8 oz. shredded Monterey Jack cheese, shredded

Cook noodles. Grease casserole dish. Drain and flake tuna, then mix with sour cream, mayonnaise, mustard, celery, onions, thyme and noodles. Spoon 1/2 of mixture in dish, top with 1/2 of cheese and zucchini. Repeat layers. Top with tomatoes. Bake at 350 degrees for 30 minutes.
