This tortellini salad takes you to a whole new level of pasta salad. There are plenty of different filling options for tortellini, so you can choose the type that best appeals to your taste buds.   • 1 package of tortellini
  • 1 small onion, sliced
  • 3 tomatoes, chopped
  • 1 cucumber, peeled, seeded and chopped
  • 1 red bell pepper, chopped
  • 2 Tbs. fresh parsley
  • 2 C. green beans, trimmed
  • 2 Tbs. olive oil
  • 1 clove garlic, pressed
  • 1 Tbs. basil, minced
  • 1 Tbs. lemon juice
  • 1 tsp. dried dill
  • salt and pepper

Bring a medium pot of water to boil and drop in the tortellini and the green beans
Cook until tender
Drain and rinse with cold water to chill
Put the tortellini, green beans, onion, tomatoes, cucumber, bell pepper and parsley in a large bowl and mix well
In a small bowl, whisk the oil, lemon juice, dill, basil, and garlic together to make the dressing
Pour over the pasta and toss to coat everything
Season to taste with salt and pepper before serving
You can chill this salad for up to 24 hours before you serve it
