As the temperature drops during the back to school season, warm up with this delicious tortellini soup. While this recipe is vegetarian, you could add crumbled sausage for a more traditional Italian tortellini.

  • 2 cans chicken broth
  • 1 ¾ cups water
  • 1 can diced tomatoes
  • 1 package cheese tortellini
  • 1 chopped onion
  • 5 minced garlic cloves
  • 1 package chopped baby spinach
  • ¾ teaspoon dried basil
  • Pepper

Sauté the onion in a pot over medium heat and then add the garlic. Cook for 1 minute. Pour in the broth and water. Add the tomatoes and bring the pot to a boil. Add the tortellini and return the pot to a boil. Cook for 8 minutes before reducing the heat. Next, add the basil and spinach. Season with pepper and cook for 4 minutes. Serve with French bread.
