  • 1 Pound of Ground Turkey
  • 2 Diced Carrots
  • 3 Seeded and Sliced Red Chili Peppers
  • 1 Diced Onion
  • 1 Minced Clove of Garlic
  • 1 Cup of Corn
  • 1 Cup of Chicken Broth
  • 1 15 Ounce Can of Drained Kidney Beans
  • 1 Teaspoon of Lime Juice
  • 2 Teaspoons of Oregano
  • 1 Bayleaf
  • 2 Tablespoons of Chili Powder
  • 1 Teaspoon of Cumin
  • 1 ½ Cups of Diced Tomatoes
  • 1 Teaspoon of Red Pepper Flakes
  • 1 Teaspoon of Cayenne Pepper
  • 3 Tablespoons of Chopped Cilantro
  • 1 Tablespoon of Olive Oil
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

In a large heavy pot over a high heat, begin browning the turkey with the olive oil. Stir it for about 5 minutes, making sure to break up any clumps as you do. Next, add in the onion, garlic, red chili peppers, oregano, chili powder, cumin, red pepper flakes, cayenne pepper, and bayleaf.

After another 5 minutes, add in the tomatoes, carrots, chicken broth, lime juice, salt, and pepper and bring everything to a boil. Then, reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally. Once that time is up, add in the beans and corn for another 10 minutes.

Scoop some into bowls, top each with cilantro, and enjoy warm!
