  • 3 lb. boneless chicken, cut into pieces
  • ¼ C. vegetable oil
  • 2 onions, diced
  • 8 cloves garlic, minced
  • ¼ C. mild curry powder
  • 2 T. hot curry powder
  • Salt and pepper to taste
  • 4-6 potatoes, peeled and cubed

In a saucepan, cover chicken with water, bring to a boil, reduce heat, and simmer for 20 minutes until no longer pink. In a skillet, heat oil and sauté onion and garlic until tender. Stir in both curry powders, salt, and pepper until evenly coated. Transfer mixture into saucepan with chicken and fresh broth. Add potatoes and continue simmering for 20 to 30 minutes until tender.
