  • 4 medium plums, pitted and diced
  • ½ cup of confectioner’s sugar
  • 1 cup of flour
  • 1 cup of olive oil
  • 1 cup of almond milk
  • ¾ cup of brown sugar
  • 2 eggs, beaten
  • 2 tablespoons of lemon juice
  • 1 tablespoon of almond extract

Preheat the oven to 350 degrees Fahrenheit.
In a bowl, combine the diced plums with confectioner’s sugar. Let sit for about 15 minutes.
While the plum and sugar are becoming syrupy, thoroughly mix flour, olive oil, almond milk, brown sugar, eggs, lemon juice and almond extract together in a bowl to make the batter.
Give the plums and sugar a good stir and pour into a greased loaf pan. Pour the batter on top and bake for about 30 minutes until a toothpick comes out clean.
Let cool for about 15 minutes, then slice and serve with fruits on the side!
