  • 1 ¼ cups pulverized vanilla wafers
  • 3 tablespoons melted butter
  • 2 tablespoons white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ginger
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • ¾ cup sugar
  • 3 loosely beaten eggs
  • 2 teaspoons vanilla
  • 3 packages cream cheese
  • 1 cup chai latte concentrate

Preheat the oven to 350 degrees F. Simmer the chai concentrate until it is reduced over medium-low heat. Mix together the vanilla wafers and melted butter and then press the crust into the bottom of a greased springform pan. Bake for 10 minutes and then reduce the oven heat to 290 degrees. Beat the softened cream cheese until it is smooth and then add the chai reduction and vanilla. Blend the bowl until it is smooth and then add the cornstarch, sugar, and cloves, cardamom, and ginger. Add the eggs and stir so they are fully incorporated. Pour over the crust and sprinkle a little extra cardamom on top. Bake in the oven for 2 hours, cool, and chill in the fridge.
