  • 6 flour tortillas
  • 1.25 pounds skirt steak, sliced in ¼-inch strips
  • 2 thinly sliced red bell peppers
  • 1 thinly sliced yellow bell pepper
  • 1 thinly sliced green bell pepper
  • 1 sliced yellow onion
  • 1 tablespoon minced garlic
  • 3 tablespoons olive oil
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • Salt and pepper to taste

Preheat the oven to 400 degrees F and spray a rimmed baking sheet with cooking spray. Combine the chili powder, paprika, and ½ teaspoon each of salt and pepper in a small bowl. Stir to combine. In a separate larger bowl, toss the steak strips, peppers, garlic, and onion before drizzling with olive oil. Toss the ingredients to coat in oil and then sprinkle the seasoning and coat completely. Lay the steak fajitas over the baking sheet evenly and bake for 20 minutes. Serve with heated tortillas.
