  • 8 medium tortillas
  • 2 ½ cups of mozzarella cheese, shredded
  • 1 can of sweet corn (15 oz.)
  • 1 cup of onion, diced
  • 1 cup red bell pepper, diced
  • ½ cup of green onion, chopped
  • 2 tablespoons of garlic powder
  • salt and pepper, to taste

Preheat oven to 400 degrees Fahrenheit.
In a bowl, toss together cheese, corn, onion, bell pepper, green onion, garlic powder and salt and pepper.
Lay down 4 tortillas on a greased sheet pan, then scoop the filling evenly onto each tortilla. Cover with remaining tortillas.
Bake for 7-10 minutes until crisp and cheesy.
Cut into slices and serve!
