  • 2 boneless turkey tenderloin
  • ½ C, shallots, chopped
  • 1 C. carrots, chopped
  • 1 C. kale
  • 2 cloves of garlic, minced
  • 2 tsp. sage, chopped
  • 1 Tbs. olive oil
  • 1 tsp. kosher salt
  • ¼ tsp. black pepper
  • Cooking twine

Preheat the oven to 375 degrees. Saute the shallots, carrots, and garlic. Once the veggies start to get tender, toss in the kale, sage, salt, and pepper. Butterfly the tenderloins and using a mallott, flatten the them. Put the veggie mixture inside and roll them up. Tie them with the twine and bake them for 25 minutes.
