Oatmeal isn’t always everyone’s go-to dessert choice, but these soft oatmeal cookies with walnuts will be everyone’s favorite in its ultimate form as an ice cream sandwich.

  • 3 cups of oats
  • 2 cups of brown sugar
  • 2 eggs, beaten
  • 1 cup of butter, softened
  • 1 cup of walnuts, finely chopped
  • 1 teaspoon of baking soda
  • 1 tub of your favorite vanilla ice cream

Preheat oven to 375 degrees Fahrenheit.
In a large bowl, combine oats, sugar, eggs, butter, walnuts and baking soda until formed into a nice dough. Roll out dough into 24 balls of equal size, then flatten. Place them on a greased sheet pan. Bake for 10 minutes.
Once the cookies have completely cooled, begin assembling them into ice cream sandwiches.
Place a scoop of vanilla ice cream onto the flat side of one cookie, then cap it with the flat side of another cookie on the ice cream side. Repeat for the rest of the cookies. Firmly place them together.
Serve immediately!
