Watermelon Berried Chiffon

Watermelon Berried Chiffon

This is an easy recipe that is quite forgiving as far as ingredients go. It makes good use of the watermelon that wasn't quite used up at the big party and reduces it down to a manageable spot in the refrigerator. It also makes use of any fresh or frozen berries and yogurt for creaminess to turn this into a delectable summer chiffon!

Place the unflavored gelatin into the water container (small bowl) and let soften for 5 minutes. Put 1 cup of the watermelon puree into a small saucepan and add the softened gelatin. Cook 3 minutes over medium heat until the gelatin has dissolved. Place all of the purees into a large bowl and mix in the gelatin mix. Stir and combine. Add the preserves, sugar, lemon juice and yogurt. Blend well. Cover bowl with plastic wrap and chill until firmed (at least 1 hour). This can be layer into parfait glasses alternating with more fruit and chiffon or just decorated with a dollop or cream topping and a few berries. The summertime sweetness of the watermelon just shines thru!
