  • 2 pounds of Gnocchi, precooked
  • 2 tomatoes, diced
  • 2 cups of milk
  • 2 cups of white cheddar, shredded
  • 1 cup of Parmesan, crumbled
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 1 teaspoon of fresh basil, chopped
  • 1 teaspoon of fresh oregano, chopped
  • Salt and pepper, to taste

As the oven preheats to 400 degrees, add the cooked gnocchi to a large baking dish. Melt the butter in a pot over medium heat, then slowly add in the milk, white cheddar, flour, basil, oregano, salt, and pepper. Stir constantly until the sauce has thickened. Next, pour the cheese sauce over the gnocchi and mix in the diced tomatoes. Finally, sprinkle the Parmesan on top. Bake the white cheddar gnocchi for 20 minutes, or until the top is golden brown.
