This easy seafood casserole will satisfy all your family members! The fresh cod is served with rice, broccoli, and tomatoes and is of course sprinkled in a layer of delicious cheese.

  • 1 pound cod
  • ½ cup shredded cheese
  • 1 ½ cups chicken broth
  • ½ cup rice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon Italian seasoning
  • 3 cups chopped broccoli
  • 1 cup diced tomatoes
  • Dash of paprika

Bring the broth, rice, Italian seasoning, and garlic powder to a boil in a large pan. Spoon the mixture into a greased baking dish and bake for 10 minutes at 375 degrees. Top with the broccoli, tomatoes, and then the fish. Sprinkle a dash of paprika over the fish. Cover and bake for 25 minutes. Sprinkle with cheese and bake for 2 more minutes.
