It is always nice to wake up to the nice smell of pancakes and syrup. Add a twist to how you ordinarily make your pancakes. Instead of your usual strawberry or blueberry pancakes, opt to make whole-grain strawberry pancakes. They are as delicious as your usual pancakes but healthier.

  • 1 ½ cups whole wheat flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 eggs
  • 2/3 c vanilla yogurt
  • ¾ c water
  • 1 ¾ c sliced fresh strawberries
  • 2/3 c strawberry yogurt

Heat the skillet to 375°F or over medium-high heat. Spray with cooking spray before heating.

Get a large bowl and mix the flour, sugar, baking powder, baking soda, and salt. After mixing, put this aside first and get a medium bowl. This is your flour mixture.

In the medium bowl, put eggs, 2/3 cup of vanilla yogurt, water, and oil and beat with a whisk until you have a smooth mixture. Pour this into the flour mixture you just made and stir until it becomes moist.

For each pancake, pour not more than 1/4 cup of batter from cup or pitcher into the hot skillet. Cook these pancakes up to 2 minutes or until you observe tiny bubbles on top. The pancakes should be puffed and dry around the edges by this time. If so, turn them and do the same to the other sides.

Place these pancakes on individual plates and add sliced strawberries on top of them. If you want, you can also add strawberry yogurt on top.

Waking up to a whole-grain treat in the morning can certainly make your mornings a little sweeter. Start the day right with some healthy pancakes.
