Instead of bread stuffing, try this dressing at your dinner table.

Ingredients

  • 1/2 C. Rice
  • 1/4 C. Wild rice
  • 2 1/4 C. Chicken broth
  • 1/4 C. Onions, diced
  • 1/4 lb. Mushrooms, diced
  • 2 Tbs. Parsley, chopped
  • 1/2 tsp. Thyme
  • 2 Tbs. Butter
  • 1 Egg, beaten
  • Salt and pepper to taste

Directions

Place 1 1/2 C. of chicken broth in a saucepan. Add the regular rice and bring to a boil. Cover, reduce the heat and cook until tender (about 20 minutes). Add 3/4 C. of chicken broth to a separate saucepan. Add the wild rice and cook until tender (the grains will begin to burst). Melt the butter in a skillet. Add the onion and mushrooms. Cook until just soft. Pre-heat the oven to 350. Lightly oil a casserole dish. Toss together all ingredients and add to the dish. Bake for 30 minutes. Serves 4.
