Wild Rice Salad

Rice is usually used as a side dish that compliments some sort of meat dish, this time try making it as a salad. It is delicious and a healthy way of filling up your stomach.

  • 1 C. uncooked wild rice
  • Seasoned salt (optional)
  • 2 C. diced cooked chicken
  • 1-1/2 C. halved green grapes
  • 1 C. sliced water chestnuts, drained
  • 3/4 C. mayonnaise
  • 1 C. cashews (optional)
  • 6 lettuce leaves

Cook rice according to pkg. directions, using seasoned salt if desired. Drain well; cool to room temperature. Spoon into a large bowl. Add chicken, grapes, water chestnuts and mayonnaise. Toss gently with a fork. Cover and chill. Just before serving, add cashews if desired. Line individual bowls with lettuce leaves and fill with salad.

Makes 6 servings.
