Yellow rice takes on its color from the chicken broth it's cooked in. It makes an amazing side dish at dinner, but also a great two-in-one breakfast meal!

Ingredients

  • 1 pound of chorizo, diced
  • 1 can of chicken broth
  • 1 can of black beans, drained
  • 2 cups of long grain rice
  • 2 cloves of garlic, minced
  • 2 red chilis, diced
  • ½ yellow onion, chopped

Directions

In a large pot over medium heat, bring the chicken broth to a boil. Then, add the rice and simmer for 20 minutes. As the rice cooks, sauté the chorizo until brown or for about 10 minutes. Halfway through, add the garlic and onion. Once cooked, stir in the chorizo mixture, black beans, and red chili into the rice and simmer for an additional 5 minutes.
