  • 2 tablespoons butter, plus 2 tablespoons butter
  • 1/2 cup finely chopped onion
  • 3 tablespoons all-purpose flour
  • 1 1/2 cup hot milk
  • 1 1/2 cups grated sharp cheddar
  • 2 heads broccoli, cut into 2-inch pieces, quickly steamed
  • 1 1/2 cups crushed butter crackers

In a medium saucepan, melt 2 tablespoons of butter over medium high heat. Add in onions and cook until translucent for around 4 minutes. Stir in flour and stir to coat onions. Cook for 2 minutes, remove from heat and whisk in milk. Return to heat. Bring to simmer and stir in cheese one handful at a time. Add broccoli to the cheese sauce and pour into dish. Melt the rest of the butter in a small skillet and stir in crushed butter cracker crumbs. Cover rest of casserole with crumbs. Bake until golden brown.
