  • 1 C. plain yogurt
  • 2 eggs
  • 1/3 C. extra virgin olive oil
  • 2 T. lemon juice
  • 2 T. lemon zest
  • 1 C. brown sugar
  • 1/4 C. limoncello liqueur
  • 2 C. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 T. limoncello liqueur
  • 1 C. whole blueberries

Begin by preheating an oven to 350 degrees F. Whisk together the yogurt, eggs, oil, lemon juice, lemon zest, sugar, and limoncello in a bowl. In a separate bowl, mix the flour, baking powder, and baking soda. Mix both mixtures together until smooth. Pour batter into prepared pan. Bake in the preheated oven for about about 30 minutes. Stir the sugar and limoncello together in a bowl and spoon this mixture over the cake. Top the glaze with whole fresh blueberries.
