  • 2 lbs. ripe tomatoes
  • 2 Tbs. heavy whipping cream
  • 3-4 Tbs. white wine vinegar
  • Salt, to taste
  • Parsley, for garnish

Cut tomatoes into chunks. Add to a blender and blend until smooth. Rub through a strainer and drain into a bowl.

Add to a pot and warm. Add cream, vinegar and salt. Stir well.

Cover and chill for at least 1 hour. Garnish with parsley and serve.
