Zucchini and tomatoes are tossed with pasta and chicken in this simple side dish. Don't forget to sprinkle cheese on top.

  • 1 (16-oz.) pkg. spaghetti, cooked and drained
  • 2 zucchini squash, cut into quarters
  • 2 Tbs. olive oil
  • 1 1/2 tsp. Italian seasoning
  • 2 large ripe tomatoes, cut into quarters
  • 1 Tbs. butter
  • Salt and pepper to taste

In a very large skillet, cook and stir zucchini in hot oil. Sprinkle with Italian seasoning, salt and pepper. Cook for 4 to 6 minutes. Add tomatoes and cook 1 more minute. Add cooked pasta and butter. Mix well before serving.
