These fritters are super easy to make and a great way to sneak a vegetable into your next family dinner. And once you know how to make a fritter like this, you can easily sub in whatever veggie you want.

  • 2 large zucchini
  • 2 tsp. salt
  • 1/4 C. minced scallions
  • 1/4 C. chopped parsley
  • 1 Tbs. minced garlic
  • 3/4 C. parmesan
  • 1/4 C. flour
  • 1 egg
  • olive oil for frying

1) Grate the zucchini and toss with salt. Place in a collander and let stand a few minutes, then press out water.

2) Combine all ingredients thoroughly. Form into small, slightly rounded patties.

3) In a large skillet or frying pan, heat olive oil at a medium heat, then add patties. Cook on each side until golden-brown, about 3 minutes each side. Replenish oil for additonal patties as needed.

Try serving with sour cream.
