This simple combination of cubed zucchini and cooked rice is excellent in a casserole and complimented with green onions and herbs. It’s a great side dish for any upcoming dinner parties!

  • 1/3 cup rice
  • 2/3 cup water
  • 2 tablespoons olive oil
  • 1 ½ pounds cubed zucchini
  • 1 cup sliced green onions
  • 2 cups shredded cheddar cheese
  • ½ teaspoon paprika
  • ½ teaspoon basil
  • 1 ½ teaspoons garlic salt

Bring the rice and water to a boil. After it boils, lower the heat, cover the pot, and simmer for 20 minutes. Over medium heat, add the oil to the skillet and cook the zucchini and green onions for 5 minutes. Season with garlic salt, basil, and paprika. Mix this into the cooked rice. Add half of the cheese and mix together. Grease a baking dish lightly and preheat the oven to 350 degrees. Transfer the rice and zucchini mix to the dish and top with the rest of the cheese. Bake for 20 minutes.
