This cheesy bake is reminiscent to mac and cheese, but with vegetables instead. Zucchini, tomatoes, and mushrooms are baked with filling and gooey cheese.

  • 1 Cup Mushrooms
  • 1 Cup Zucchini, Sliced
  • 1 Cup Cherry Tomatoes, Halved
  • 1 Cup Cheddar Cheese
  • 1 can cream of mushroom soup
  • salt
  • pepper

Mix vegetables and soup in a bowl and season.
Preheat the oven to 350 degrees.
In ramekins, pour a bit of the mixture into each and cover with cheese.
Bake for 30 to 45 minutes or until cheese is melted.
